Easy Peasy Prawn Fettuccine!


This meal was inspired by the first meal I ate when we were on our honeymoon in the Maldives.

Except it was with lobster. Mmmm mmmmm...

This is just my take on the recipe, I have made it about 4 times now and we both love it!

what you will need
half a kilo of prawns - peeled and poop shute removed
500g of fettuccine - I get the one from Coles that comes on a white tray
1 punnet of grape tomatoes - cut in half
a handful of finely chopped parsley
some chopped onion and garlic
a few squirts of olive oil
pinch of salt and pepper
chilli flakes

what you need to do
Pop the pasta in a large pot in salted water till perfectly cooked
Heat up the olive oil in a pan, I like to use a wok most of the time :)
add the onion and garlic till just golden then throw in the prawns till they are about 75% cooked
add the grape tomatoes - just to warm them and so they soften a bit
sprinkle in half of the parsley (you'll need some for later)
toss in the pasta
drizzle a generous amount of olive oil over the pasta, the pinch of salt and pepper, the parsley and the chilli flakes
mix well - I use two tongs to make sure everything is evenly coated in all the goodness
Plate up and sprinkle with extra chilli flakes.

This makes usually enough for 2 people and leftovers for lunch the next day!
